Ingredients
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- kosher salt, to taste
- 2 tablespoons unsalted butter, melted, divided
- 4 cups beef broth
- 1 (2-ounce) package onion soup and dip mix
- 2 1/2 pounds deli roast beef, thinly sliced and cut into 1-inch-long strips
- 1 (12-count) package slider potato rolls
- 1 (16-ounce) block Swiss cheese, sliced
Directions
Step 1 -In a large pan over medium-low heat, add the olive oil and heat, about 1 minute.
Step 2 -Add the onions and the salt to the heated oil and cook, stirring occasionally, until they are browned and caramelized, about 35 minutes.
Step 3 -Transfer the caramelized onions to a bowl.
Step 4 -Preheat the oven to 350 degrees F.
Step 5 -Use 1 tablespoon of the melted butter to grease a 9x13-inch baking dish.
Step 6 -In the same pan used for the onions over high heat, add the beef broth and the onion soup mix and bring it to a boil.
Step 7 -Reduce the heat to a simmer. Add the roast beef slices to the broth mixture and simmer, about 10 minutes.
Step 8 -Use tongs to transfer the cooked beef strips to a small bowl.
Step 9 -Cut the potato rolls in half horizontally, separating the top from the bottom, but leaving the individual rolls intact.
Step 10 -Place the bottom potato roll half sliced-side up in the prepared dish and evenly top with the caramelized onions and the roast beef strips.
Step 11 -Evenly pour enough of the broth mixture from the pan over the beef layer so it is very moistened.
Step 12 -Evenly top the beef layer with the Swiss cheese slices, then add the remaining potato roll top half.
Step 13 -Evenly brush the top of the potato rolls with the remaining melted butter, then cover the baking dish with foil.
Step 14 -Bake the sandwiches, about 25 minutes.
Step 15 -Discard the foil, switch the oven to the broil setting, transfer the baking dish to the upper rack, and broil the sandwiches until they are golden-brown, about 2-3 minutes.
Step 16 -Cut into individual sandwiches and serve.
