Freezer Cookies are a miracle, a marvel of sweet thinking and sweet tastes! These little treats use tangy, rich cream cheese and fruity cereal as the base and then take a trip to the freezer for a refreshing twist on regular cookies. Then they're dipped in creamy white chocolate with a hint of bright lemon for a crisp, vibrant flavor. Colorful, easy, and just so much fun, Freezer Cookies can make any get-together a cool experience!

Ingredients

  • 4 cups Fruity Pebbles™ cereal
  • 6 ounces cream cheese, softened
  • white sugar, to taste
  • 8 ounces white candy-coating pieces
  • 2 tablespoons shortening
  • 1/8 teaspoon lemon extract, optional
  • sprinkles, optional, to taste

Directions

Step 1 -In a food processor, add the cereal and process it until finely crushed.

Step 2 -Add the cream cheese to the food processor and process again until blended.

Step 3 -Shape the cereal mixture into 1-inch balls.

Step 4 -Coat the bottom of a glass with nonstick spray.

Step 5 -Dip the bottom of the prepared glass in the sugar.

Step 6 -Spread the cereal balls out on a baking tray lined with wax paper.

Step 7 -Press the balls with the bottom of the prepared glass to flatten them to a 1/4-inch thickness, dipping the bottom of the glass back into the sugar, as needed.

Step 8 -Place the baking tray in the freezer and let the cookies freeze until firm, about 30 minutes.

Step 9 -In a microwave-safe bowl, add the candy-coating pieces and the shortening and microwave until melted.

Step 10 -Stir until smooth.

Step 11 -Stir in the lemon extract.

Step 12 -Dip the cookies in the coating mixture, allowing the excess to drip off.

Step 13 -Place the dipped cookies back on the baking tray.

Step 14 -Immediately decorate the cookies with the sprinkles.

Step 15 -Serve.
