Ingredients

  • 2 pints cherry or grape tomatoes, halved
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 tablespoon sugar
  • salt, to taste
  • 1/2 teaspoon thyme, dried
  • 2 cups farro, cooked
  • 1/2 cup pine nuts
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup herbs, like parsley, basil, oregano, cilantro, etc.
  • pepper, to taste
  • For the lemon vinaigrette:
  • 3 tablespoons lemon juice
  • 2 tablespoons champagne vinegar
  • 1 1/2 tablespoons honey
  • 2 cloves garlic, finely minced or pressed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup extra virgin olive oil

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Line a baking sheet with parchment paper. Drizzle the cherry tomatoes with olive oil.

Step 3 -Sprinkle them with garlic, sugar, salt, and thyme. Roast in the oven for 45 minutes.

Step 4 -Cook the farro according to package instructions. Once cooked, toss with a bit of olive oil to prevent it from sticking together.

Step 5 -Toast the pine nuts in a skillet over medium-low heat until slightly golden and fragrant. Toss frequently to prevent burning.

Step 6 -To make the dressing, whisk all of the ingredients together in a bowl.

Step 7 -Combine the farro and tomatoes together in a large salad bowl.

Step 8 -Toss in the feta, roasted pine nuts, and fresh herbs of your choosing.

Step 9 -Add 1/4 cup of dressing at a time, to make sure you don't add too much.

Step 10 -Season with salt and pepper to taste.

Step 11 -Serve and enjoy!
