Perfectly classy and just a smidge upscale, but still completely approachable, this delicious golden breakfast favorite is clothed in a fluffy, cheesy spinach filling all on a crispy cauliflower crust. She's everything all the other breakfast mains want to be. Nothing can ever compare to the one and only Fancy-Girl Quiche!

Ingredients

  • For the cauliflower crust:
  • 1 small head cauliflower, cut into florets
  • 1/2 cup parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 egg, slightly beaten
  • For the spinach filling:
  • 5 eggs
  • 1/3 cup milk or heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon olive oil
  • 2 1/2 ounces baby spinach
  • 2 scallions, thinly sliced
  • 1/2 cup feta cheese, crumbled, plus more, to taste, for topping

Directions

Step 1 -Preheat the oven to 450 degrees F.

Step 2 -Coat a 9-inch pie dish with nonstick cooking spray.

Step 3 -In a food processor fitted with the blade attachment, add the cauliflower florets, cover, and pulse until they are completely crumbled.

Step 4 -Pour the cauliflower pieces into a medium microwave-safe bowl, then heat in the microwave on high heat, about 5 minutes.

Step 5 -Pour the heated cauliflower pieces onto a clean kitchen towel or cheese cloth and ring out all the excess liquid.

Step 6 -In a large bowl, add the cauliflower pieces, the parmesan, 1/2 teaspoon of the salt, and the garlic powder and stir until it is combined.

Step 7 -Add 1 of the slightly beaten eggs to the cauliflower mixture and mix until it is thoroughly combined.

Step 8 -Evenly pour the cauliflower mixture into the prepared pie dish, then use your hands to mold it into an even layer on the bottom and up the sides.

Step 9 -Bake the crust, about 10 minutes.

Step 10 -Transfer the pie dish to a wire rack then reduce the oven temperature to 400 degrees F.

Step 11 -In a second large bowl, add the remaining eggs, the milk, the remaining salt, and the pepper and whisk thoroughly.

Step 12 -In a small skillet over medium-high heat, add the oil.

Step 13 -Add the spinach to the hot oil and cook, stirring frequently, until it is just wilted, about 2-3 minutes. Transfer the skillet from the heat.

Step 14 -Add the wilted spinach, the scallions, and 1/2 cup of the feta cheese to the egg mixture and mix to combine.

Step 15 -Evenly pour the spinach mixture into the crust and bake until it is golden, about 15-20 minutes.

Step 16 -Serve the quiche sprinkled with the extra feta cheese.
