Ingredients

  • 2 large leeks, very thoroughly washed
  • 2 tablespoons unsalted butter
  • salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 -Remove the root ends and dark green tops of the leeks and discard them.

Step 2 -Cut the leeks into 1/2-inch slices.

Step 3 -Place the leeks in a bowl of cold water and let them sit for 5 minutes. The leek slices will float to the top while any sand will sink to the bottom. This is an essential step; leeks are notoriously dirty and you will want to make sure they are as thoroughly washed as possible.

Step 4 -Using a slotted spoon, transfer the leek slices to a colander and shake off the excess water.

Step 5 -In a large skillet over medium heat, melt the butter.

Step 6 -Add the leek slices to the melted butter and cook, undisturbed, until the bottoms turn a deep brown, about 8 minutes.

Step 7 -Flip the leek slices over and season them with the salt and the pepper.

Step 8 -Let the leeks cook undisturbed until brown on the bottom and tender, about 8 minutes.

Step 9 -Serve.
