Ingredients

  • 1 (9-inch) pre-made pie crust, thawed (if frozen)
  • 2 tablespoons olive oil
  • 3-4 cups mixed raw vegetables, such as broccoli, onions, mushrooms, bell peppers, and spinach
  • 6 eggs
  • 3/4 cup milk or cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon nutmeg
  • 1 cup ham or bacon, optional, cooked
  • 1 1/2 cups cheese, of your choice, shredded
  • parsley, optional, to taste, freshly chopped, for garnish

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Shape the pie crust to fit a 9x13-inch casserole dish or a 9-inch pie plate, crimpling and cutting as needed so the dough covers the bottom and the edges of the dish, and pressing down to seal any seams.

Step 3 -In a large skillet over medium-high heat, heat the olive oil.

Step 4 -Add the vegetable mixture and cook until the vegetables have softened, about 5-10 minutes.

Step 5 -In a bowl, whisk the eggs, the milk, the salt, the pepper, and the nutmeg together.

Step 6 -Layer the vegetable mixture, the ham, and the cheese into the pie crust.

Step 7 -Gently add the egg mixture over the filling mixture in the pie crust.

Step 8 -Bake until the eggs are set and the top is slightly brown, about 30-40 minutes.

Step 9 -Allow the quiche to cool for 5-10 minutes.

Step 10 -Serve garnished with the parsley.
