Coffee-Crusted Beef Tenderloin uses espresso beans as part of an aromatic and smoky-sweet rub that enhances the beefy flavor of the tenderloin. Ingredients

  • 1/4 cup espresso beans, finely ground
  • 3 tablespoons brown sugar
  • 2 teaspoons ground cinnamon
  • ground cayenne pepper, to taste
  • salt, to taste
  • ground black pepper, to taste
  • 2 (6-ounce) beef tenderloin steaks
  • 1 tablespoon canola oil

Directions

Step 1 -Sift the ground espresso beans, the brown sugar, the cinnamon, the cayenne pepper, the salt, and the pepper together in a bowl.

Step 2 -Generously coat all sides of both of the tenderloins with the espresso mixture.

Step 3 -Place the tenderloins on a plate and refrigerate until the flavors blend together, for about 30 minutes.

Step 4 -Preheat the oven to 400 degrees F.

Step 5 -Heat a large ovenproof skillet over medium-high heat.

Step 6 -Add the canola oil.

Step 7 -Once the oil is shimmering, add the tenderloins and cook until the bottom of each steak is browned, about 1 minute 30 seconds to 2 minutes.

Step 8 -Flip the tenderloins.

Step 9 -Place the skillet in the oven.

Step 10 -Roast the tenderloins until they reach the desired doneness, 130-135 degrees F for medium-rare, about 4-5 minutes.

Step 11 -Transfer the skillet from the oven and tent with aluminum foil and let the tenderloins rest for 5 minutes.

Step 12 -Serve.
