How did muffins become an acceptable breakfast treat when cupcakes aren't? We're not sure, but you know what? It doesn't matter when Classic Strawberry Muffins are on the table. They have just the right cupcake feel while still being considered a muffin to make up the difference! Tender, buttery cakes are filled with sweet, summery berry goodness, making each of these Classic Strawberry Muffins little golden-brown happiness-creators! It's impossible to have just one... go on and try!
Ingredients
- 1/2 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1/2 cup neutral oil
- 3/4 cup whole milk, room temperature
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon white vinegar
- 1 teaspoon baking soda
- 2 cups strawberries, cut into small pieces, plus more, to taste, whole, for serving
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Prepare a 12-cup muffin tin with muffin liners.
Step 3 -In a large bowl, add the butter and the sugar and using an electric hand mixer, beat until light and fluffy.
Step 4 -Slowly add the eggs, 1 at a time, to the butter-sugar mixture and beat to combine.
Step 5 -Add the vanilla extract and beat to combine.
Step 6 -Slowly pour in the oil while continuing to beat the butter mixture together until combined.
Step 7 -Slowly pour the whole milk into the butter mixture while continuing to beat until it is incorporated.
Step 8 -Sift the flour, the baking powder, and the salt into the butter mixture and using a rubber spatula, fold and incorporate until just combined. Be careful not to overmix.
Step 9 -In a small bowl, add the vinegar and the baking soda and mix to combine. Be careful as it will bubble up.
Step 10 -Immediately fold the vinegar-baking soda mixture into the muffin batter until combined.
Step 11 -Add 2 cups of the strawberry pieces into the batter and fold to combine.
Step 12 -Spoon the muffin batter into the prepared muffin tins.
Step 13 -Bake the muffins until a toothpick inserted into the center of the muffins comes out clean, about 20-22 minutes.
Step 14 -Serve warm with the extra whole strawberries.
