It packs plenty of crunch from apples, celery, grapes, and nuts, and has all the traditional chicken salad taste from chicken breast and mayo. Eat Chicken Salad as a sandwich, with some crackers, or serve it over a bed of greens!

- 7 ounces rotisserie chicken breast, chopped
- 1 medium apple, peeled and cut into small cubes
- 1 cup red seedless grapes, cut in half
- 1/2 cup celery, chopped
- 1/4 cup light mayonnaise
- kosher salt
- pepper
- 2 tablespoons pecans or walnuts
- 6 cups mixed baby greens (such as spinach and arugula)
Directions
Step 1 -Cut and chop the rotisserie chicken into small pieces.
Step 2 -In a medium bowl, combine the mayonnaise with salt and pepper.
Step 3 -Add in the chicken, grapes, apples, and celery. Mix together to combine.
Step 4 -Allow it to chill in the refrigerator until you are ready to eat it.
Step 5 -Mix in your nuts of choice right before serving.
Step 6 -Serve over a bed of greens for a well-balanced meal!
