Do quesadillas count as sandwiches? An interesting and delicious question! It's a question worth musing over as you munch on some Chicken Bacon Quesadillas for One. Like all great quesadillas, Chicken Bacon Quesadillas for One are cheesy beyond belief, but these are also filled with tender chicken and crispy bacon. Stacked high or slathered with sour cream and guacamole, these are a delicious and quick way to celebrate your evening!
Ingredients
- For the quesadilla:
- 2 slices lean bacon, sliced into 1/2-inch pieces
- 2 (8-inch) flour tortillas
- 2 tablespoons butter, softened
- 1 tablespoon pico de gallo
- 1/4 cup Colby-Jack cheese, shredded
- 2 chicken breasts, cooked and cut into strips
- Optional toppings:
- sour cream, to taste
- guacamole, to taste
- picante sauce or salsa, to taste
Directions
Step 1 -In a pan over medium heat, fry the bacon, flipping halfway through, until it starts to crisp, about 6-10 minutes.
Step 2 -Transfer the bacon from the pan onto a paper-towel-lined plate to drain.
Step 3 -Preheat a nonstick pan over medium heat.
Step 4 -Spread the butter lightly on 1 side of the flour tortillas.
Step 5 -Place 1 of the tortillas, buttered-side down, into the preheated pan.
Step 6 -Sprinkle the bacon over the tortilla.
Step 7 -Add the pico de gallo on top of the bacon layer.
Step 8 -Add the Colby-Jack cheese over the pico de gallo layer.
Step 9 -Add the cooked chicken on top of the cheese layer.
Step 10 -Place the remaining flour tortilla on top of the chicken layer, buttered-side up.
Step 11 -Cook until the filling is heated through, about 1-2 minutes.
Step 12 -Carefully flip the quesadilla onto the reverse side and cook, about 1-2 minutes. The quesadilla should be heated through but not browned.
Step 13 -Remove and place on a serving dish.
Step 14 -Cut the quesadilla into small triangles.
Step 15 -Serve the quesadillas with the guacamole, the sour cream, and the picante sauce.
