Ingredients

  • 3 tablespoons butter, plus more, to taste, for greasing the baking dish
  • 1 small yellow onion, diced
  • 3 tablespoons all-purpose flour
  • 1 cup half-and-half
  • 1/2 cup whole milk
  • salt, to taste
  • ground black pepper, to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 4 large russet potatoes, peeled and thinly sliced
  • 1 1/2 cups hickory-smoked ham, chopped
  • 1/2 cup cheddar cheese, grated
  • 1/2 cup Monterey Jack cheese, grated
  • scallions, to taste, sliced, for garnish

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Grease a baking dish using the extra butter.

Step 3 -Melt the remaining butter in a large skillet over medium heat.

Step 4 -Add the onions to the butter and cook, while stirring, until they start to soften, about 3-4 minutes.

Step 5 -Sprinkle the flour over the onion and whisk together.

Step 6 -Cook the onion mixture until golden-brown, about 2 minutes.

Step 7 -Stir the half-and-half and the milk into the onion mixture and whisk until thickened, about 3-4 minutes.

Step 8 -Transfer the mixture from the heat.

Step 9 -Season the sauce with the salt and the pepper.

Step 10 -Add the garlic powder, the Worcestershire sauce, the onion powder, and the paprika.

Step 11 -Place 1/2 of the sliced potatoes into the prepared baking dish.

Step 12 -Top the potato layer with 1/2 of the ham, 1/2 of the cheddar cheese, and 1/2 of the Monterey Jack cheese, in that order.

Step 13 -Pour 1/2 of the sauce over the layers.

Step 14 -Repeat the layers once, starting with the potatoes and ending with the sauce.

Step 15 -Cover the dish with aluminum foil and bake for 40 minutes.

Step 16 -Discard the foil and bake until the cheese is golden on top and the sauce is bubbling, about 20-30 minutes.

Step 17 -Garnish with the scallions and serve.
