Ingredients

  • 2 heaping cups crispy rice cereal or crushed corn flakes
  • 4 large eggs
  • 2/3 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 8 thick slices bread, of your choice
  • syrup, optional, to taste, for serving

Directions

Step 1 -Preheat the griddle to 350 degrees F or heat a skillet on the stovetop over medium heat.

Step 2 -Add the cereal to a shallow pie dish or plate. Add the eggs, the milk, the flour, the sugar, the salt, the cinnamon, and the vanilla in a blender and whisk. It's okay if the flour doesn't mix in completely.

Step 3 -Add the batter to a separate shallow dish.

Step 4 -Dip each piece of bread into the egg mixture on both sides.

Step 5 -Press the battered bread gently into the cereal, flipping to coat both sides.

Step 6 -Grease the griddle or skillet with cooking spray.

Step 7 -Place the coated bread slices on the hot skillet and cook until golden on the bottom, about 3 minutes.

Step 8 -Flip and cook on the other side for another 3 minutes.

Step 9 -Serve warm with the syrup.
