Ingredients

  • For the blackberry syrup:
  • 1/3 cup blackberries
  • 1/3 cup water
  • 1/3 cup sugar
  • For the cocktail:
  • 1 bottle Champagne or prosecco
  • 4 sprigs thyme, for garnish
  • 8 blackberries, for garnish

Directions

Step 1 -In a small saucepan, bring 1/3 cup of the blackberries, the water, and the sugar to a boil.

Step 2 -Reduce the heat to low and let the blackberry mixture simmer until thickened, about 10 minutes.

Step 3 -Strain the blackberry syrup and let it cool.

Step 4 -Add 2 tablespoons of the syrup to the bottom of four glasses.

Step 5 -Top the syrup in the glasses with the Champagne and garnish each with 1 sprig of thyme and 2 blackberries each.

Step 6 -Serve.
