Ingredients
- 1 egg, beaten
- 1 cup buttermilk
- 1 1/2 teaspoons garlic powder
- 6 chicken breast halves, skinless, boneless, and cut into strips
- 1 cup all-purpose flour
- 1 cup seasoned bread crumbs
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 quart oil, for frying
Directions
Step 1 -In a small bowl, whisk to combine the egg, buttermilk, and garlic powder.
Step 2 -Pour mixture into a large resealable zipper bag.
Step 3 -Add the chicken strips to the bag and seal it well, massaging it so the chicken is completely coated.
Step 4 -Refrigerate the chicken for at least 2 hours and up to 4 hours.
Step 5 -In another large resealable zipper bag, combine the flour, bread crumbs, salt, and baking powder.
Step 6 -Remove the chicken strips from the refrigerator and drain, discarding the marinade mixture.
Step 7 -Put the chicken strips in the bag with the flour mixture.
Step 8 -Seal the bag well and shake to fully coat the chicken strips with the flour mixture.
Step 9 -In a large cast-iron skillet, heat the oil to 375 degrees F.
Step 10 -Carefully place the flour-coated chicken into the hot oil in batches; working in batches so as to not cool the oil. Be careful to not let any oil splash on you.
Step 11 -Cook until the outside is golden brown, the juices run clear and no pink remains in the chicken, about 6-8 minutes.
Step 12 -Remove the chicken from the oil and place them on a stack of paper towels to drain.
Step 13 -Serve hot!
