Ingredients
- 2 tablespoons vegetable oil
- 1 1/2 pounds ground beef
- 3 tablespoons chili powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt, plus more, to taste
- ground black pepper, to taste
- 1 medium onion, finely diced
- 4 cloves garlic, minced
- 1 (15-ounce) can pinto beans, strained and rinsed
- 2 cups jarred tomato salsa
- 1/2 cup water
- 6 cups yellow corn tortilla chips
- 3 cups cheddar and Monterey-Jack cheese blend, shredded
- 1 cup sour cream, stirred well, for serving
- 1 cup iceberg lettuce, shredded, for serving
- 2 plum tomatoes, diced, for serving
- 1/2 avocado, diced, for serving
- 1/4 cup pickled jalapeños, chopped, for serving
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Grease a 9x13-inch casserole dish.
Step 3 -In a large skillet over high heat, add the oil and heat until it is shimmering.
Step 4 -Add the beef, the chili powder, the cumin, the oregano, 1 teaspoon of the salt, and the pepper to the oil and cook, while crumbling the meat, until it is no longer pink, about 5 minutes.
Step 5 -Add the onions and the garlic to the beef mixture and cook until the onions are soft, about 5 minutes.
Step 6 -Add the beans, the salsa, and the water to the beef mixture, bring it to a simmer, and cook until the sauce thickens and coats the meat, about 5 minutes.
Step 7 -Season the beef mixture with the salt and the pepper.
Step 8 -Place 1/2 of the tortilla chips in the bottom of the prepared casserole dish.
Step 9 -Spread 1/2 of the meat mixture over the top of the chip layer.
Step 10 -Sprinkle 1/2 of the cheese over the beef mixture layer.
Step 11 -Repeat the layers once, starting with the chips and ending with the cheese.
Step 12 -Bake the casserole, uncovered, until the cheese melts and the casserole is hot, about 20 minutes.
Step 13 -Serve the casserole with the sour cream, the lettuce, the tomatoes, the avocado, and the pickled jalapeños.
