Ingredients
- 8 ounces farfalle pasta
- 8 ounces fresh baby spinach, washed
- 1 cup whole-milk ricotta
- 1 tablespoon extra-virgin olive oil
- 1/3 cup parmesan cheese, grated, plus more, to taste, for serving
- 1 clove garlic, grated or pressed
- 1 lemon, zested and juiced
- salt, to taste
- black pepper, to taste
- lemon wedges, optional, to taste, for serving
Directions
Step 1 -In a large pot of salted, boiling water, add the pasta and cook it to al dente, according to the package directions.
Step 2 -During the last minute of the pasta cooking time, reserve 1/2 cup of the cooking water, then add the spinach to the boiling water and stir well, making sure to submerge the leaves.
Step 3 -Drain the pasta and the spinach and return them to the same pot.
Step 4 -In a medium bowl, add the ricotta, the olive oil, 1/3 cup of the parmesan cheese, the garlic, the lemon zest, and the lemon juice and stir to combine.
Step 5 -Season the ricotta mixture with the salt and the pepper.
Step 6 -Add the ricotta mixture and about 1/4 cup of the reserved pasta water to the pasta mixture and stir well to evenly coat the pasta. If the sauce seems too thick, add the remaining pasta water, a little at a time, until it is smooth and creamy.
Step 7 -Serve with the extra parmesan and the lemon wedges.
