Ingredients
- 1 tablespoon vegetable oil
- 2 chicken breasts, sliced into thin strips
- salt, to taste
- pepper, to taste
- 4 tortillas
- 4 teaspoons mayonnaise
- 3 cups spring mix
- 2 tomatoes, sliced
- 1 red onion, sliced
- 2 avocados, sliced
- 2/3 cup cheddar cheese, shredded
Directions
Step 1 -In a medium skillet over medium heat, add the oil.
Step 2 -Add the chicken and season with the salt and the pepper. Cook on each side until golden and cooked through, with no pink remaining, about 5-7 minutes.
Step 3 -Set the chicken aside.
Step 4 -In the same skillet, let 1 of the tortillas warm and soften for 10 seconds. Repeat with all the tortillas.
Step 5 -Spread the mayonnaise on the tortilla, followed by the spring mix, the tomatoes, the red onion, the avocado, the cooked chicken, and the cheese.
Step 6 -Serve!
