Fall festivities are here! The leaves are falling, the air is crisp, and the apple cider is fresh and wonderful! Apple Cider Donuts takes the spiced, aromatic, fruity flavor of cider and bakes it into fluffy donuts with crunchy, extra sweet cinnamon-sugar topping. It takes less than an hour to make Apple Cider Donuts and they taste like they come fresh from the farm stand! Who could resist?

Ingredients

  • 1 1/2 cups apple cider
  • 2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon apple pie spice
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted and cooled to room temperature
  • 1/2 cup light or dark brown sugar, packed
  • 1 large egg, room temperature
  • 1/2 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup milk, at room temperature
  • For the topping:
  • 3/4 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • 3/4 teaspoon apple pie spice
  • 6 tablespoons unsalted butter, melted

Directions

Step 1 -Pour the apple cider into a small saucepan.

Step 2 -Heat the cider over low heat on the stove-top, stirring occasionally, until it reduces to 1/2 cup, about 20 minutes. Check on the mixture every 5 minutes.

Step 3 -Leave any solids or spices left on top of your reduced apple cider. Set the cider aside to cool for 10 minutes.

Step 4 -Preheat the oven to 350 degrees F.

Step 5 -Spray a donut pan with nonstick cooking spray. Set it aside.

Step 6 -Whisk the flour, baking powder, baking soda, 1 teaspoon of the cinnamon, the 1 teaspoon of the apple pie spice, and the salt in a large bowl. Set the mixture aside.

Step 7 -Whisk the 2 tablespoons of the melted butter, the brown sugar, the egg, 1/2 cup of the granulated sugar, the vanilla extract, and the milk together.

Step 8 -Add the dry ingredients to the wet ingredients.

Step 9 -Add the reduced apple cider and whisk the mixture all together until combined and smooth. The batter should be slightly thick.

Step 10 -Place the batter into the prepared donut pan filling each cup about halfway. Using a large zipped-top bag with a corner cut off is recommended.

Step 11 -Bake until the tops and edges are lightly browned, about 10-11 minutes.. To test, poke your finger into the top of the donut. If the donut bounces back, they're ready.

Step 12 -Cool the donuts for 2 minutes before transferring them to a wire rack.

Step 13 -Re-grease the pan with cooking spray and bake the remaining donut batter.

Step 14 -Combine the remaining cinnamon, the remaining granulated sugar, and the remaining apple pie spice together in a medium bowl.

Step 15 -Coat the donuts by generously dipping both sides of each donut into the remaining melted butter, then again into the apple spice topping.

Step 16 -Serve immediately.
