The name of A Good Morning Bake works in two ways. It's part of a good morning and it's a good "morning bake!" Te-he! Sorry, we're giddy because this really is fun and delicious. A medley of garden-fresh vegetables, hearty and fluffy potatoes, and sunset-colored sweet potatoes, oven-roasted to tender perfection is just the right way to wake up! Of course, the runny and savory sunny eggs nestled in between, and the smoky melted cheese both help, too! A Good Morning Bake is just, well, great!
Ingredients
- 3 cups small broccoli florets
- 2 cups yellow potatoes, cut into 1/2-3/4-inch pieces
- 1 large sweet potato, cut into 1/2-3/4-inch pieces
- 1 small red onion, cut into thin slices
- 2 tablespoons olive oil
- salt, to taste
- 6 eggs
- 1/2 cup manchego cheese, shredded
- 1/2 teaspoon cracked black pepper
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Coat a 2-quart rectangular baking dish with nonstick spray.
Step 3 -In a large bowl, add the broccoli, the potatoes, the sweet potatoes, the onions, the olive oil, and the salt and toss to coat.
Step 4 -Add the vegetable mixture to the prepared baking dish and spread it out evenly.
Step 5 -Roast the vegetable mixture for 10 minutes.
Step 6 -Stir the vegetable mixture and roast until the vegetables are tender and start to brown, about 5 minutes.
Step 7 -Transfer the baking dish to a wire rack to cool.
Step 8 -Cover the baking dish and chill it in the refrigerator for at least 8 hours and up to overnight.
Step 9 -Transfer the chilled vegetable mixture from the refrigerator and let it stand at room temperature for 30 minutes.
Step 10 -Preheat the oven to 375 degrees F.
Step 11 -Uncover the baking dish and bake the vegetable mixture for 5 minutes.
Step 12 -Transfer the baking dish from the oven.
Step 13 -Make six wells in the vegetable mixture.
Step 14 -Add 1 of the eggs into each of the wells in the vegetable mixture.
Step 15 -Bake the vegetable-egg mixture for 5 minutes.
Step 16 -Sprinkle the vegetable-egg mixture with the manchego cheese.
Step 17 -Bake until the cheese is melted, the egg whites are set, and the yolks have thickened, about 5-10 minutes.
Step 18 -Serve sprinkled with the cracked black pepper.
