- 1 pound carrots, peeled
- 2 teaspoons Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1 1/2 tablespoons vegetable oil
- 1 1/2 tablespoons extra-virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons parsley, chopped
- 1 tablespoon scallions, finely chopped
Directions
Step 1 -Shred the carrots in a food processor.
Step 2 -In a large bowl, combine the Dijon mustard, the lemon juice, the honey, the vegetable oil, the olive oil, the salt, and the pepper.
Step 3 -Add the carrots, the parsley, and the scallions to the dressing and toss well.
Step 4 -Plate and serve.
