Ingredients
- For the dressing:
- 3/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon pure maple syrup
- 3/4 teaspoon celery seeds
- 1/4 teaspoon sea salt
- freshly ground black pepper, to taste
- For the broccoli slaw:
- 3 cups broccoli stems, julienned, plus 2 cups small broccoli florets
- 1 cup carrots, julienned
- 1 cup red cabbage, sliced
- 1/4 cup red onion, thinly sliced
- 1/2 cup almonds, toasted and sliced, plus more, to taste, for garnish
Directions
Step 1 -In a large bowl, add the mayonnaise, the apple cider vinegar, the Dijon mustard, the maple syrup, the celery seeds, the sea salt, and the black pepper and whisk to combine.
Step 2 -In a second large bowl, add the broccoli stems, the broccoli florets, the carrots, the red cabbage, the red onions, and 1/2 cup of the toasted almonds and lightly toss to combine.
Step 3 -Evenly drizzle about 3/4 of the dressing over the broccoli mixture and toss to coat. Add the remaining dressing, if desired, and toss to combine.
Step 4 -Serve the broccoli slaw garnished with the extra toasted almonds.
