Ingredients

  • 1 (6-ounce) package fresh baby spinach, chopped
  • 1/3 cup prepared pesto sauce
  • 1 (15-ounce) jar Alfredo sauce
  • 1/4 cup chicken broth
  • 12 ounces bow tie pasta, cooked
  • 1 cup low-moisture, part-skim mozzarella cheese, shredded
  • 4 (4-ounce) chicken breasts, boneless and skinless, cooked and warm, sliced
  • 2 tablespoons parsley, chopped, for garnish
  • parmesan, to taste, grated, for serving

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Lightly grease an 11x7-inch baking dish.

Step 3 -In a medium bowl, add the spinach and the pesto and toss to combine.

Step 4 -In a second medium bowl, add the Alfredo sauce and the chicken broth and stir to combine.

Step 5 -Spread about 1/2 cup of the Alfredo-broth mixture into the bottom of the prepared baking dish and top with 1/2 of the spinach-pesto mixture.

Step 6 -In a large bowl, add the cooked bow tie pasta and the remaining Alfredo-broth mixture and stir to combine.

Step 7 -Spoon 1/2 of the pasta mixture over the spinach-pesto mixture in the baking dish.

Step 8 -Spoon the remaining spinach-pesto mixture over the pasta mixture, then top with the remaining pasta mixture.

Step 9 -Bake the Alfredo bake, about 30 minutes.

Step 10 -Sprinkle the Alfredo bake with the mozzarella cheese and bake until it is hot and bubbly, about 5 minutes.

Step 11 -Evenly plate the Alfredo bake and top each serving with the sliced chicken.

Step 12 -Serve the Alfredo bake garnished with the parsley and sprinkled with the parmesan.
