3-Cheese Spaghetti is a delicious and simple way to get amazing cheesy flavor in a real hurry! It doesn't even make you work to acquire all the cheeses needed for the melty, sharp, creamy sauce — a package of Italian cheese blend will do that job for you! The pasta is tender, the sauce is rich, and the speed and flavor cannot be overstated! A simple lunch or a classic dinnertime staple, 3-Cheese Spaghetti is a 5-star experience!

Ingredients

  • For the pasta:
  • 12 ounces spaghetti
  • 1 tablespoon extra-virgin olive oil
  • 3 cloves garlic, minced
  • 3/4 cup heavy cream
  • 3/4 cup low-sodium chicken broth
  • 3/4 cup Italian cheese blend, shredded
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • Optional, for garnish:
  • 2 tablespoons chives, freshly chopped
  • freshly ground black pepper, to taste
  • parmesan cheese, to taste, shredded or grated

Directions

Step 1 -In a large pot of salted, boiling water, add the spaghetti and cook it to al dente, according to the package directions.

Step 2 -Reserve 1 cup of the pasta water and drain the remainder.

Step 3 -In a large skillet over medium heat, add the olive oil.

Step 4 -Add the garlic to the hot oil and cook until fragrant, about 1 minute.

Step 5 -Add the heavy cream, the chicken broth, and 1/2 cup of the reserved pasta water to the garlic and stir to combine.

Step 6 -Add the spaghetti to the sauce mixture and toss to combine. Allow the spaghetti mixture to come to a slight simmer.

Step 7 -Transfer the skillet from the heat.

Step 8 -Add the Italian cheese blend to the spaghetti mixture and stir and toss to combine, while adding the remaining reserved pasta water, a little at a time, until the cheese has melted and the sauce reaches your desired consistency. You may not need all of the remaining reserved pasta water.

Step 9 -Taste the spaghetti mixture for seasoning and add the salt and the freshly ground black pepper, as needed.

Step 10 -Serve garnished with the chives, the black pepper, and the parmesan cheese.
