  • For the dressing:
  • 1 cup vanilla Greek yogurt, fat-free
  • 1/2 cup coconut milk
  • 1/2 cup orange juice
  • For the salad:
  • 4 cups cantaloupe, cut into 1/2-inch cubes
  • 4 cups watermelon, cut into 1/2-inch cubes
  • 2 medium navel oranges, segmented
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • 1/2 cup sweetened coconut, toasted and shredded

Directions

Step 1 -In a small bowl, whisk together the yogurt, the coconut milk, and the orange juice.

Step 2 -Refrigerate the dressing until serving.

Step 3 -In a large bowl, place the cantaloupe, the watermelon, the oranges, the raspberries, and the blueberries.

Step 4 -Gently toss the fruit with the dressing.

Step 5 -Sprinkle the salad with the coconut.
