The Creamiest Egg Salad is of course extra-creamy, with plenty of delicious tang to contrast the savory egg flavor and the fragrant herbs mixed in. Like all good egg salads, the Creamiest Egg Salad is a snap to make and an even easier dish to love! Whether it is for a cookout or a simple lunch, this dish always finds a way to bring a smile to your face!
Ingredients
- 4 large eggs, hard-boiled and cooled
- 1/3 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1 tablespoon chives, chopped
- 1 tablespoon parsley, chopped
- salt, to taste
- pepper, to taste
- toast, optional, to taste, for serving
Directions
Step 1 -Peel and roughly chop the cooled hard-boiled eggs.
Step 2 -Transfer the chopped eggs into a mixing bowl.
Step 3 -Mash the eggs with a fork until the eggs are small chunks.
Step 4 -In the same mixing bowl, add the mayonnaise, the Dijon mustard, the apple cider vinegar, the chives, and the parsley and mash together to combine.
Step 5 -Taste the egg salad for seasoning and add the salt and the pepper as needed.
Step 6 -Serve on the toast.
