Ingredients• 1/4 cup vegetable oil • 3 medium shallots, thinly sliced • 1 medium red bell pepper, chopped into 1/2-inch pieces • 1 pound chicken thighs, thinly sliced • 3 cloves garlic • 3 Thai bird's eye chilies, finely diced • 2 1/2 cups white rice, long-grain, cooked, and day-old • 1 tablespoon oyster sauce • 1 tablespoon soy sauce • 2 teaspoons fish sauce • 1 teaspoon brown sugar, packed • 3/4 cup basil leaves, packed
Over medium-high heat, heat the oil in a wok.
Add the shallots and bell pepper, cooking and stirring until the shallots are tender and fragrant, about 2 minutes.
Add the chicken, cooking until nearly cooked through, about 5 minutes, stirring constantly.
Add the garlic and chilies, stirring until fragrant, about 1 minute.
Add the rice and cook for 3 minutes.
In a small mixing bowl, whisk together the oyster sauce, soy sauce, fish sauce, and brown sugar.
Pour the sauce over the rice mixture until thoroughly mixed.
Check that the chicken is cooked through and registers 165 degrees F when checked with a meat thermometer.
Remove the wok from the heat and stir in the basil before serving.
