• 1 pound red potatoes • 1/2 medium onion, chopped into chunks • 2 cloves garlic, minced • 3 tablespoons olive oil • 1 tablespoon smoked paprika • 1/2 teaspoon salt • 1/4 teaspoon red pepper flakes • 3-4 eggs • 1/2 cup cheddar cheese, shredded • parsley, chives, and other fresh herbs, optional, to taste, for topping


Step 1

Preheat the oven to 400 degrees F.

Cut the potatoes in half lengthwise and then in half again lengthwise.

Dice the potato quarters into 1/2-inch pieces.

Add the potatoes and the onion to a sheet pan.
