The tomatoes are coming in bright and juicy, and it's time to find creative uses for them while they're in season. Crack Tomatoes offer a truly irresistible dish that makes the most of this savory, tangy fruit. Coated in aromatic and zesty seasonings and roasted to elevate and deepen their flavor, Crack Tomatoes pair wonderfully with grilled chicken or seared pork when you aren't popping them in your mouth one by one. Add in fragrant basil with sharp, creamy feta cheese, and very few side dishes can amaze in quite the same way. You'll be cracking your oven open, over and over again, to whip up another batch.


Ingredients

• 1 (40-ounce) package of cherry tomatoes • 1 (10-ounce) package of yellow tomatoes • 2 1/2 tablespoons olive oil • 4 teaspoons ranch seasoning, dry powder • 2 garlic cloves, zested or minced • 1/2 teaspoon salt • 1/4 teaspoon ground black pepper • 1/8 teaspoon red pepper flakes • 3 tablespoons chives, chopped • 1/3 cup basil, chopped • 3 ounces feta cheese

Directions

Step 1

Preheat the oven to 375 degrees F.

Step 2

Cut the cherry tomatoes and yellow tomatoes in half.

Step 3

Combine the oil, ranch seasoning, garlic, salt, pepper, and red pepper flakes in a small bowl.

Step 4

Toss the tomatoes in the spice mixture.

Step 5

Spread the tomatoes onto a large rimmed baking sheet.

Step 6

Roast until slightly wrinkled and deep in color, about 20-25 minutes.

Step 7

Transfer the roasted tomatoes to a bowl.

Step 8

Toss with the chives, basil, and feta.

Step 9

Serve.
