Ingredients• 2 pounds boneless, skinless chicken breasts • 1/2 cup sliced almonds • 1 cup mayonnaise • 1 tablespoon dijon mustard • 1 cup red grapes, quartered • 2 stalks celery, diced • 3 green onions (green and white parts), sliced • 2 tablespoons chopped parsley • 1 tablespoon chopped tarragon • 1 lemon, juiced • salt and pepper, to taste
Cook chicken in a pan until chicken reaches 165 degrees F internally. Cut the cooled chicken into half-inch pieces.
Cut up the celery, green onions, grapes, parsley, and tarragon. Combine with mayonnaise, dijon mustard, and lemon juice. Mix well and season with salt and pepper.
Mix well and chill.
