Ingredients• 2 slices bread, of choice • dijon mustard, optional, to taste • 1 1/2 ounce brie cheese, thinly sliced • 2 slices leftover turkey • 2 tablespoons cranberry sauce, more to taste • 6 baby spinach leaves, optional, more to taste • butter, for grilling
On only one slice of the bread, spread out the Dijon mustard.
Stack the brie, turkey, cranberry sauce, spinach, and another layer of brie cheese.
Put the other slice of bread on top.
Butter the outsides of the sandwich or heat up the butter in a nonstick skillet, griddle, or panini press until it is sizzling.
Cook the sandwich in the hot pan/panini press, using a spatula to press it down on the sandwich, flipping halfway through so the sandwich is golden on both sides and the cheese is melted. You don’t need to pay attention to the last step if you are using a panini press.
When the sandwich is your desired level of toasted, serve.
