Ingredients• 1/2 teaspoon lemon zest, grated • 3 tablespoons lemon juice • 2 tablespoons olive oil • 2 cloves garlic, minced • 2 teaspoons capers, drained • 3 tablespoons basil, minced and divided • 4 (6 ounces) tilapia filets • 1/2 teaspoon salt • 1/4 teaspoon pepper
Preheat the broiler.
In a small bowl, whisk the lemon zest, lemon juice, oil, and garlic until blended.
Stir in the capers and 2 tablespoons of the basil.
Reserve 2 tablespoons of the mixture for drizzling over the cooked fish.
Brush the remaining mixture onto both sides of the tilapia.
Sprinkle the filets with salt and pepper.
Broil the tilapia 4 inches from the heat until the fish just begins to flake easily with a fork and reaches 145 degrees F, about 3-4 minutes on each side.
Drizzle the fish with the reserved lemon mixture and sprinkle with the remaining basil.
