Tacos on a Stick are the dish to make when you want tacos but also want to mingle at a party! The convenient main course stacks everything you'd want on a taco but on a stick–like juicy sirloin steak, sweet and crispy red peppers, green peppers, onions, and bright, juicy tomatoes, all covered in your favorite taco seasoning. Sounds like a flavorful fiesta, right? You can dip them in some spicy salsa con queso or fluffy sour cream to experience even more Tex-Mex goodness. Tacos on a Stick are dripping with flavor and good times!
Ingredients
• 1 (1-ounce) envelope of taco seasoning • 1 cup tomato juice • 2 tablespoons canola oil • 2 pounds beef top sirloin steak, cut into 1-inch cubes • 1 medium green pepper, cut into chunks • 1 medium sweet red pepper, cut into chunks • 1 large onion, cut into wedges • 16 cherry tomatoes • salsa con queso, optional, to taste • sour cream, optional, to tasteDirections
In a large shallow bowl, combine the taco seasoning, tomato juice, and oil. Mix well.
Save 1/2 cup of the tomato juice mixture for basting. Refrigerate.
Add the beef to the remaining tomato juice mixture and turn to coat.
Cover the bowl and refrigerate for at least 5 hours and up to overnight.
Drain and discard the marinade from the beef.
On metal or soaked wooden skewers, alternately thread the marinated beef, green peppers, red peppers, onion, and tomatoes.
Grill, uncovered, over medium heat for 3 minutes on each side.
Carefully baste the beef and veggie skewers with the reserved marinade.
Continue turning and basting until the meat reaches desired doneness, 145 degrees F for medium, about 8-10 minutes.
Let the beef and veggie skewers stand for 5 minutes.
Serve with salsa con queso or sour cream.
