Tacos on a Stick

Tacos on a Stick are the dish to make when you want tacos but also want to mingle at a party! The convenient main course stacks everything you'd want on a taco but on a stick–like juicy sirloin steak, sweet and crispy red peppers, green peppers, onions, and bright, juicy tomatoes, all covered in your favorite taco seasoning. Sounds like a flavorful fiesta, right? You can dip them in some spicy salsa con queso or fluffy sour cream to experience even more Tex-Mex goodness. Tacos on a Stick are dripping with flavor and good times!


• 1 (1-ounce) envelope of taco seasoning • 1 cup tomato juice • 2 tablespoons canola oil • 2 pounds beef top sirloin steak, cut into 1-inch cubes • 1 medium green pepper, cut into chunks • 1 medium sweet red pepper, cut into chunks • 1 large onion, cut into wedges • 16 cherry tomatoes • salsa con queso, optional, to taste • sour cream, optional, to taste


Step 1

In a large shallow bowl, combine the taco seasoning, tomato juice, and oil. Mix well.

Step 2

Save 1/2 cup of the tomato juice mixture for basting. Refrigerate.

Step 3

Add the beef to the remaining tomato juice mixture and turn to coat.

Step 4

Cover the bowl and refrigerate for at least 5 hours and up to overnight.

Step 5

Drain and discard the marinade from the beef.

Step 6

On metal or soaked wooden skewers, alternately thread the marinated beef, green peppers, red peppers, onion, and tomatoes.

Step 7

Grill, uncovered, over medium heat for 3 minutes on each side.

Step 8

Carefully baste the beef and veggie skewers with the reserved marinade.

Step 9

Continue turning and basting until the meat reaches desired doneness, 145 degrees F for medium, about 8-10 minutes.

Step 10

Let the beef and veggie skewers stand for 5 minutes.

Step 11

Serve with salsa con queso or sour cream.
