Ingredients• 1 pound lean ground beef • 1 onion, diced • 2 cloves garlic, minced • 1 (1 ounce) packet taco seasoning mix • 1/2 cup water • 2/3 cup enchilada sauce • 1 1/2 cups frozen corn • 1 1/2 cups bell pepper, diced • 1 (12 ounce) can black beans, drained and rinsed • 1 1/2 cups cheddar cheese, shredded • 16 ounces frozen tater tots For the topping: • 1/3 cup enchilada sauce • 1/3 cup salsa • 1 1/2 cups cheddar cheese, shredded and divided • tomatoes, optional, to taste • lettuce, optional, to taste • sour cream, optional, to taste • guacamole, optional, to taste
Preheat the oven to 400 degrees F.
In a nonstick skillet over medium heat, cook the beef, onion, and garlic until the onions are tender and the beef is browned, about 5 minutes.
Add the taco seasoning and stir.
Add the 1/2 cup of water, 2/3 cup of the enchilada sauce, the corn, the bell pepper, and the beans.
Cook until the bell pepper is tender and the sauce has thickened, about 4-5 minutes.
Pour the beef mixture into a casserole dish and sprinkle 1 1/2 cups of the cheese over top.
Arrange the tater tots evenly over the cheese layer in the dish.
Bake for 30 minutes.
In a small bowl, combine the remaining 1/3 cup of the enchilada sauce with the salsa.
Spread the sauce mixture over the tater tots and top with the remaining cheese.
Bake until the cheese has melted, about 10 minutes.
Serve hot with your favorite toppings.
