Summer Superfood Kale Salad

Superfoods to the rescue! A true superfood is any food that offers maximum nutritional benefits for minimal calories. Superfoods are typically packed with vitamins, minerals, and antioxidants. This Summer Superfood Kale Salad has two—kale and blueberries. Yes, this salad is healthy—but it's also incredibly delicious.


For the salad: • 4-5 cups kale finely shredded • 1 1/2 cups watermelon cut into small cubes • 1 1/2 cups blueberries • 1 carrot • 1 bell pepper • 1/4 cup walnuts chopped • 1/2 cup pumpkin seeds For the dressing: • 3 tablespoons champagne vinegar • 1 1/2 tablespoons walnut or olive oil • 2 teaspoons honey • 1/4 teaspoon mustard powder


Step 1

First, prepare the dressing by adding all the dressing ingredients together. Ensure the honey has dissolved and the dressing is thoroughly mixed.

Step 2

Prepare the kale for the salad by removing the stems and finely shredding. Once shredded, pour the dressing over the kale and mix thoroughly. Once mixed, place the kale in the refrigerator to chill.

Step 3

Prepare the salad toppings—finely slice the peppers, cube the watermelon, and cut the carrots. Add the fruit and veggies into the bowl with the kale.

Step 4

In a skillet over medium heat, toast the chopped walnuts and the pumpkin seeds. Stir to keep from burning.

Step 5

Remove the salad from the refrigerator and add the nuts for an extra crunch!
