Summer Chicken & Pomegranate Salad

You will not be able to get enough of this crisp, refreshing salad. With juicy pomegranate, tender chicken, ripe avocado, and bold arugula all topped with a homemade red wine vinaigrette, this salad will quickly become a staple in your meal plan.


For the Salad: • 1 head romaine lettuce, chopped • 1 cup arugula • 9 ounces boneless skinless chicken breast, cooked and sliced • 3/4 cup pomegranate seeds • 8 red grape/cherry tomatoes, halved • 8 gold grape tomatoes, halved • 1/2 avocado, sliced • Kosher salt and freshly ground black pepper, to taste Red Wine Vinaigrette: • 2 tablespoons red wine vinegar • 2 tablespoons olive oil • 2 teaspoons Dijon mustard • 2 cloves crushed garlic • 4 tablespoons water • salt, to taste


Step 1

Combine all of the dressing ingredients in a jar. Shake to combine.

Step 2

Arrange all of the salad ingredients in a large salad bowl. Drizzle with the dressing and serve immediately.
