• 1 (8-ounce) sirloin steak • 1/2 teaspoon kosher salt, divided • 1/4 teaspoon black pepper • 1/4 cup olive oil • 2 tablespoons fresh flat-leaf parsley, finely chopped • 1 1/2 tablespoons white wine vinegar • 1 tablespoon capers, finely chopped • 1 teaspoon garlic, minced • 1/4 teaspoon crushed red pepper flakes • 5 cups arugula • 1/2 cup red onion, thinly sliced • 1/4 cup fresh parmesan cheese, shaved


Step 1

Heat a skillet over medium-high heat on the stovetop.

Coat the skillet with cooking spray.

Season the steak with 1/4 teaspoon salt and 1/4 teaspoon pepper.

Add the steak to the skillet, cooking until medium-rare, reading 130 degrees F when tested with a meat thermometer, about 3 minutes on each side.
