Ingredients• 1/8 teaspoon olive oil • 1 cup sour cream • 1/2 teaspoon salt • 1/2 teaspoon pepper • 1 teaspoon oregano, dried • 1 teaspoon basil, dried • 1 teaspoon garlic powder • 1 tablespoon cornstarch • 3/4 cup parmesan, grated and divided • 4 chicken breasts, boneless and skinless • 4 slices mozzarella • parsley, optional, to taste, chopped, for garnish • rice, optional, cooked, to taste, for serving
Preheat the oven to 375 degrees F.
Coat a rectangular baking dish with the olive oil.
In a medium bowl combine the sour cream, salt, pepper, oregano, basil, garlic powder, cornstarch, and 1/2 cup of the parmesan cheese. Set the mixture aside.
Place the chicken breasts into the prepared baking dish.
Top each chicken with a slice of the mozzarella.
Smother the chicken with the sour cream mixture.
Top the chicken with the remaining 1/4 cup of the parmesan cheese.
Cook until the chicken registers 165 degrees F with a meat thermometer, about 1 hour.
Garnish with the chopped parsley and serve over the rice.
