IngredientsFor the chicken and vegetables: • 1 pound chicken thighs, boneless and skinless • 1/2 teaspoon kosher salt • 1/2 teaspoon ground black pepper • 2 tablespoons olive oil • 1 cup cherry tomatoes, halved or chopped • 1 cup sweet corn kernels, raw, grilled, cooked, or frozen • 1/3 cup scallions, sliced • 1/4 cup sharp cheddar cheese, grated For the dressing: • 1/4 cup plain greek yogurt • 1/4 cup mayonnaise • 1 1/2 tablespoons lemon juice • 1/4 teaspoon liquid smoke • salt, to taste • ground black pepper, to taste
Preheat the grill to the highest heat.
Season the chicken with salt, the pepper, and the garlic powder.
Brush the chicken with the olive oil.
