Slow Cooker Salsa Chicken Tacos

Flavorful, delicious, juicy chicken to enjoy with your favorite taco toppings. Everyone loves Taco Tuesdays for a simple reason: they give us an excuse to eat tacos! But with Slow Cooker Salsa Chicken Tacos, you can enjoy Taco Tuesday regardless of what day of the week it is! The chicken is slow cooked to tender perfection and soaked in flavorful bouncy salsa for even greater richness and tang. Served on top of a crispy shell, Slow Cooker Salsa Chicken Tacos are a delectable way to greet yourself after a long day. Make sure you have your favorite topping at the ready!


For the chicken: • 1 1/2 pounds chicken breasts, boneless and skinless • 2 teaspoons chili powder • 1 teaspoon ground cumin • 1/2 teaspoon ground coriander • 1 teaspoon salt, plus more to taste • 1 teaspoon freshly ground black pepper, plus more to taste • 1 clove garlic, minced • 1 cup jarred salsa • 2 tablespoons cilantro, chopped For serving: • 10 corn or flour tortilla shells, warmed • monterey jack or Mexican blend cheese, optional, shredded, to taste • romaine lettuce, optional, shredded, to taste • roma tomatoes, optional, diced, to taste • guacamole or diced avocados, optional, to taste • sour cream, optional, to taste • hot sauce, optional, to taste


Step 1

Place the chicken breasts into a slow cooker.

Step 2

Using a small bowl, add together the chili powder, cumin, coriander, 1/4 teaspoon of the salt, and 1/4 teaspoon of the pepper with a whisk.

Step 3

Pour the mixture evenly over both of the sides of the chicken breasts.

Step 4

Add the garlic and salsa over the chicken breasts, making sure to cover the chicken entirely.

Step 5

Cover the slow cooker and cook on low for about 5-6 hours.

Step 6

Transfer the chicken breasts and let them cool on a cutting board until they can be easily handled.

Step 7

Shred the chicken into pieces and return the juices to the slow cooker, stirring it combine.

Step 8

Add in the cilantro.

Step 9

Return the chicken to the pot, tossing to coat.

Step 10

Taste for seasoning.

Step 11

Lift the chicken pieces with tongs and allow the excess liquid to run off.

Step 12

Place the chicken in the tortilla shells and serve with your favorite toppings.
