Ingredients
• 3-4 pounds chuck roast, boneless • salt, to taste • pepper, to taste • 2 tablespoons olive oil • 1 (10.5 ounce) can beef consommé • 1 (14.5 ounce) can beef broth • 1 onion, sliced • 1 tablespoon soy sauce • 2 tablespoons Worcestershire sauce • 4 hoagie rolls, plus more as desired • 8 slices mozzarella cheeseDirections
Season each side of the chuck roast with salt and pepper.
In a large pan over the stovetop, add the olive oil and turn the heat on to medium-high.
Once the oil is shimmering, sear the sides of the roast until it has a golden-brown crust, about 3-4 minutes per side.
Put the chuck roast into your slow cooker.
Add in the beef consommé, beef broth, onion, soy sauce, and Worcestershire sauce.
Cover and cook on low heat until the beef is tender, about 8-10 hours.
Move the roast from the slow cooker and shred it with a fork.
Pour the cooking liquids from the slow cooker into a medium saucepan on the stovetop over medium heat.
Cook the leftover liquids until thickened and reduced slightly, about 7-10 minutes.
Slice open the hoagies.
Preheat the broiler to high.
Fill each hoagie with shredded beef.
Top the shredded beef with 2 slices of the mozzarella for each roll.
Broil the sandwiches until the cheese melts, about 3-5 minutes.
Serve the sandwiches with the jus dipping sauce on the side.
