Ingredients
• 4 boneless, skinless chicken breasts • 1 1/2 tablespoons Italian seasoning • salt, to taste • pepper, to taste • 1 (10.5 ounce) can cream of chicken soup, low sodium • 1 cup sour cream • 1 (6 ounce) box stuffing mix • 3/4 cup low sodium chicken broth • 2 cups fresh green beans Optional toppings: • 1/2 cup onions, diced • 1/2 cup celery, diced • 1/4 cup dried cranberries • 1/2 cup sausage, crumbled, cooked • 2 teaspoons dry rosemaryDirections
Step 1
Season the chicken with the Italian seasoning, salt, and pepper.
Step 2
Place into the bottom of a lightly greased slow cooker.
Step 3
In a large bowl, mix the sour cream, soup, stuffing, and half of the chicken broth together.
Step 4
Add the green beans and stuffing mixture to the slow cooker.
Step 5
Cook for 4 hours on high heat, or on low for 6-7 hours.
Step 6
Dress with optional toppings and serve with gravy, mashed potatoes, or buttermilk biscuits, if desired.
Step 7
If you prefer additional moisture, add the remaining chicken broth, mix well, and cook for an additional 10 minutes.
