This Sloppy Joe Casserole takes those same nostalgic flavors and gives them a new, home-cooked spin: the sweet and savory beef drapes over tender pasta and bright peppers. Ingredients

• 2 tablespoons oil, neutral-flavored • 1 pound ground beef • 1 small onion, chopped • 1 green bell pepper, chopped • 1 red bell pepper, chopped • 1 clove garlic, chopped • 1 (14.5-ounce) can petite diced tomatoes • 1 cup ketchup • 1 tablespoon brown sugar • 1 teaspoon yellow mustard • salt, to taste • ground black pepper to taste • 2 cups frozen whole-kernel corn • 1 (16-ounce) package penne pasta • 1 1/2 cups Colby-Jack cheese, shredded

Directions

Step 1

Preheat the oven to 350 degrees F.

Grease a 9x13-inch casserole dish.

Heat the oil in a large skillet over medium-high heat on the stovetop.

When the oil is shimmering, add the ground beef and sauté until golden brown.
