IngredientsFor the sauce: • 1/2 cup peach preserves • 1 tablespoon horseradish • 1 teaspoon wasabi powder • 1/2 teaspoon ground mustard • 1/4 teaspoon ground ginger For the scones: • 4 cups all-purpose flour • 4 teaspoons baking powder • 2 teaspoons salt • 2 cups ham, fully cooked and finely chopped • 2 cups cheddar cheese, shredded • 2 cups heavy whipping cream For the topping: • 1 large egg • 1 tablespoon water • 1 tablespoon poppy seeds
Preheat the oven to 375 degrees F.
Grease a baking sheet.
In a bowl, combine the peach preserves, horseradish, wasabi powder, ground mustard, and ground ginger.
Refrigerate the sauce until time to serve.
In a large bowl, whisk the flour, baking powder, and salt.
Add the ham and cheese to the flour mixture and toss to combine.
Stir the heavy whipping cream into the ham and cheese mixture until just moistened.
Place the dough on a lightly floured flat surface.
Gently knead the dough 10 times.
Pat the dough into two 7-inch circles.
Cut each circle of dough into six wedges.
Place the wedges on the prepared baking sheet.
In a small bowl, whisk the egg with the water.
Brush the egg wash over the scones and sprinkle with the poppy seeds.
Bake the scones until golden brown, about 40-45 minutes.
Serve warm with the chilled peach sauce.
