Ingredients• 1 pound ground pork • 1 medium onion, chopped • 2 medium carrots, chopped • 3 cups potatoes, diced and cooked • 1/2 teaspoon salt • 1/4 teaspoon pepper • 2-4 eggs
In a cast-iron skillet, cook the pork over medium heat until it’s no longer pink, about 5-7 minutes.
Add the onion and carrots, cooking until the onions are translucent and the carrots are tender, about 5 minutes.
Stir in the potatoes.
Season with the salt and pepper.
Reduce the heat to low.
Cook until the potatoes are crispy.
Top with eggs.
Cover the skillet until the eggs are cooked to your preferred doneness, about 2-5 minutes.
