• 1 pound ground pork • 1 medium onion, chopped • 2 medium carrots, chopped • 3 cups potatoes, diced and cooked • 1/2 teaspoon salt • 1/4 teaspoon pepper • 2-4 eggs


Step 1

In a cast-iron skillet, cook the pork over medium heat until it’s no longer pink, about 5-7 minutes.

Step 2

Add the onion and carrots, cooking until the onions are translucent and the carrots are tender, about 5 minutes.

Step 3

Stir in the potatoes.

Step 4

Season with the salt and pepper.

Step 5

Reduce the heat to low.

Step 6

Cook until the potatoes are crispy.

Step 7

Top with eggs.

Step 8

Cover the skillet until the eggs are cooked to your preferred doneness, about 2-5 minutes.
