Ingredients

• 2 1/2 pounds king salmon filet, skinned and deboned • 1 cup dry bread crumbs • 1/2 cup red onion, minced • 1 tablespoon Dijon mustard • 2 teaspoons horseradish • 2 eggs, lightly beaten • 1 tablespoon fresh rosemary, minced • 1/2 teaspoon salt • 1/2 teaspoon ground black pepper • 2 tablespoons olive oil • buns, optional, for serving • burger toppings, optional, of your choice, for serving

Directions

Step 1

Place the salmon on a cutting board and chop the fish until it is in small pieces.

Step 2

In a large mixing bowl, combine the salmon with bread crumbs, red onion, Dijon mustard, horseradish, and eggs.

Step 3

Season with the rosemary, salt, and pepper.

Step 4

Cover and cool in the refrigerator for 20-30 minutes.

Step 5

Preheat the grill to medium-high heat.

Step 6

Shape the salmon mixture into 8 patties and lightly brush with the olive oil.

Step 7

Grill the salmon patties on the grill until fully cooked, reading at least 120 degrees F when a meat thermometer is inserted into the thickest part, about 4-5 minutes per side.

Step 8

Serve immediately on a bun with all of your desired burger toppings.
