Ingredients• olive oil, to taste • 1 zucchini, sliced into 1/2-inch-thick rounds or slices • parmesan cheese, freshly grated, to taste • salt, to taste • pepper to taste
Preheat the broiler on high.
Line a baking sheet with aluminum foil and coat well with the olive oil.
Place the zucchini on the baking sheet, and brush the tops of the zucchini with the olive oil.
Sprinkle on the parmesan cheese.
Broil until the cheese starts to brown, about 3-4 minutes.
Flip the zucchini and sprinkle the other side with more of the parmesan.
Broil until golden, about 1 minute.
