Artichokes can be such a pain to prepare. Enter the pressure cooker to save the day! Cook the perfect artichokes in just 15 minutes using this simple recipe! Pro tip: When shopping for artichokes, select the ones that have tightly packed, dense petals.
Ingredients• 3 artichokes • 1 cup water • 2 lemons • 2 cloves garlic, whole • butter, melted, for serving
Prepare and clean the artichokes by trimming off most of the stems and, using kitchen shears, remove about 1 inch off the top of your artichoke. Using one lemon wedge per artichoke, rub the lemon all over the artichoke to prevent the artichoke from turning brown.
Trim and peel cloves of garlic. Place water and garlic cloves into the pressure cooker. Place artichokes on top in a single layer.
On the keypad of your pressure cooker, press "Manual", then press "Pressure" until the light on "High Pressure" lights up, then adjust the +/- buttons until the time reads 12 minutes. When the time has lapsed, very carefully turn the vent to "Venting" for quick release. Wait until all of the steam has released and the valve has dropped. Remove the lid.
Combine the melted butter and, if desired, add the cooked garlic to make a dipping sauce and enjoy!
