For the rolls: • 1/4 cup granulated white sugar • 1/4 cup brown sugar, packed • 2 tablespoons ground cinnamon • flour, for a work surface • 1 (1-pound) package frozen or refrigerated puff pastry, slightly thawed • 3 tablespoons butter, melted and divided For the frosting: • 4 ounces cream cheese, softened • 2 tablespoons butter, softened • 1 teaspoon vanilla extract • 1 1/2 cups powdered sugar • 1–2 tablespoons milk, optional, for consistencyDirections
Preheat the oven to 400 degrees F.
Line a 9x13-inch baking dish with parchment paper.
In a small bowl, combine the white sugar, brown sugar, and cinnamon, whisking until evenly combined.
Lightly dust a work surface with flour.
Unroll one sheet of puff pastry into a single layer.
Brush the sheet of puff pastry evenly with 1/2 of the melted butter.
Sprinkle the puff pastry sheet with 1/2 of the cinnamon/sugar mixture, leaving a 1/3-inch border on the right side of the puff pastry.
Beginning on the left side, gently roll the puff pastry from left to right.
Gently press the border to seal the roll.
Using a bread knife, slice off about 1/2-inch from each end. Discard the ends.
Cut the roll into 8 evenly sized rolls.
Place the rolls in the prepared baking dish.
Repeat the process of unrolling, buttering, sprinkling, rolling, and slicing with the second sheet of puff pastry, the remaining melted butter, and the remaining cinnamon-sugar mixture.
Place the second batch of rolls in the prepared baking dish.
Bake the rolls until they are lightly golden on top and have puffed up, for about 20-25 minutes.
Transfer the baking dish to a cooling rack.
Whisk the cream cheese, butter, vanilla, and powdered sugar together until smooth. Add the milk to thin out the frosting according to taste.
While the rolls are still warm, pour, spread, or drizzle the frosting over the tops of the rolls.
Serve warm!
