• 1 pound bulk Italian sausage • 1 (14.5-ounce) can of diced tomatoes with basil, oregano, and garlic • 1 (15.5-ounce) can of cannellini beans, rinsed and drained • 1 1/2 cups water • 1 1/2 cups instant rice, uncooked • 1/4 cup parmesan cheese, grated, plus more for garnish, if desired • 1/2 cup mini pepperonis, sliced • fresh basil, optional, chopped, to taste


Step 1

In a large skillet over medium heat, cook the sausage, breaking into crumbles and cooking until no longer pink, about 5-7 minutes.

Step 2

Drain the excess grease from the skillet.

Step 3

Add the diced tomatoes, cannellini beans, water, and rice to the sausage.

Step 4

Return the skillet to the heat and bring the sausage mixture to a boil.

Step 5

Cover the skillet and transfer away from the heat. Let it stand for 5 minutes.

Step 6

Fluff the sausage mixture with a fork; stir in the 1/4 cup cheese.

Step 7

Top the cheesy-sausage mixture with the pepperonis, additional cheese, and basil.
