Pineapple Pork Loin

Ingredients

• 2-3 pounds pork loin • salt, to taste • pepper, to taste • 2 tablespoons vegetable oil • 8 cloves garlic, minced • 1/4 cup soy sauce • 1 (23.5 ounce) can pineapple chunks, undrained • 1/2 cup brown sugar

Directions

Step 1

Trim the pork loin of excess fat.

Step 2

Season the pork with the salt and pepper. Set aside.

Step 3

Heat a large pan over medium-high heat.

Step 4

Add the oil.

Step 5

Once the oil is hot, add the pork loin.

Step 6

Brown the pork on each side until golden brown, about 2-4 minutes.

Step 7

Add the pork to a slow cooker and rub it with the garlic.

Step 8

Add the soy sauce and the can of pineapple chunks to the slow cooker.

Step 9

Pour in the brown sugar evenly on top of the pork.

Step 10

Cover the slow cooker and cook on low heat for 4-6 hours.
